Easy Kale Waldorf Salad
This is one of my favorite recipes, I make it about twice a week! I just can’t resist the sweetness of the raisins and apple, the crunchy celery and the tangy Dijon to pull it all together

* 4 cups chopped kale
* 1 large fuji apple
* 1 cup thinly sliced celery
* 1/2 cup walnuts, divided
* 1/4 cup raisins
* 2 Tablespoons Dijon
* 2 Tablespoons water
* 1 Tablespoon red wine vinegar
* 1/8 teaspoon sea salt
Put Kale in large bowl. Chop 1/2 of the apple and add to the kale. Add celery, 1/4 cup walnuts and the raisins.
Chop remaining half of apple, add to blender with the remaining ingredients.
Puree
Pour dressing over kale salad, toss and serve.
It doesn’t get any easier than that!
